Caramel custard

Caramel custard

Ingredients 
1-1/2 cups sugar, divided 
6 Eggs 
3 cups whole milk 
2 teaspoons vanilla extract 

Directions 
1. In a large heavy saucepan, cook and stir 3/4 cup sugar over low heat until sugar is melted and golden. 
    Pour into eight 6-oz. custard cups, tilting to coat bottom of cup; let stand for 10 minutes. 
2. In a large bowl, beat the eggs, milk, vanilla and remaining sugar until combined but not foamy. Pour over caramelized sugar. 
3. Place the cups in two 8-in. square baking pans. Pour boiling water in pans to a depth of 1 in. 
4. Bake at 350° for 40-45 minutes or until a knife inserted near center comes out clean. Remove from pans to cool. Refrigerate and serve cold.

Coconut chutney

scraped coconut(make sure it is thawed well if using frozen), dalia , chillies, curry leaves, salt, 3-4 leaves of cilantro and tiny pod of garlic - grind to thick consistency

Jeera aloo

Jeera aaloo...boil small potato...if you don't have that..hard boil potato  and cut in small
Oil...jeera, haldi, dhaniya, red chilli powder, sadly, amchoor powder..fry and add potato
Salt...not sadly
Garnish with fresh chopped dhaniya

Corn and bean salad


Corn and bean salad
Sweet corn, onion, tomato, black bean, finely chopped jalapeño or green chilli, fresh coriander chopped fine, salt and jeera pwd lots of lemon juice

Tortilla rollups

Tortilla roll ups recipe - to SOFTENED cream cheese, add  veggie mixture as follows - finely diced veggies(i added shredded carrots, thinly shredded cabbage, roasted red bell pepper, regular bell pepper and well chopped spinach), 1 or 2 tsp salsa, mexican cheese a good amount, 1 spoon our cream, cumin powder and salt; mix these ingredients well to make the veggie mixture; then add it to the softened cream cheese and mix well, it needs to be lump free and smooth; 
I took three different colored tortillas - regular, the garden spinach one, and the tomato basil one, lightly heated it on a pan(optional step) and spread the cream cheese mixture on it and rolled it and cut it into bite sized rolls; alternatively u can roll and slice the entire roll into just 2 pieces; enjoy!

Chopped bread in small cubes and roast 
Then heat oil add hing, rai, udad curry patta, peanuts, green chilli.
add roasted bread haldi, salt lemon juice. Garnish with coriander . Serve hot

Punjabi kadi

Punjabi kadi
Heat oil and add methi seeds to it(use mustard seeds if u don't have these) add ginger garlic paste and finely chopped onion to it. 
In a separate bowl, mix 2 tbs of besan with sour dahi/buttermilk. Mix well so there are no lumps. Add salt, haldi, dhaniya powder and garam masala to this mix and stir well. Add water to this mixture and pour this mix into pan and mix. You would need to add more water now. Once it starts boiling, let it cook for 45 min. You can add little kasuri methi towards end.
In a separate small pan, take oil and add chilli to it. Put this on top of kadi and stir...

Palak paneer

Fry onion ginger garlic then grind to paste in oil add jeera then haldi chilli pwd slit green chilli
Separately shallow cook panner this is optional 
Add to gravy add garam masala

Crispy kale

Chop kale fine toss with Olive oil salt pepper 
Heat oven at 375 and cook till kale is crispy ... About 15-20 mins

Chole for chaat

Chole for chaat.....boil chick peas and green matar ( they sell in lentil section) ..oil lot of fine chopped onion, haldi, chole masala, red chilli powder, ginger garlic paste, chopped tomato...fry and add chick peas and green matar

Hakka noodle


Hakka noodle...boil noodle....oil...add sliced onion, cabbage, French cut beans, bell papper, carrot, fry until brown, add salt, soy sauce, chilli garlic sauce , ketchup..and fry for Lil bit..add black pepper powder and add noodle
Fry for sometime
Vinegar too with sauce
And red crushed pepper

Bhindi fry

Bhindi recipe-- my style 😊
Fry jeera, add thinly sliced onion and green chili.. Add haldi, dhaniya powder and garam masala .. Add little but amchur. Add thin long cut okra and cover and cook on medium flame first. Keep stirring it frequently. Remove the lid, and let it cook for some more time. When it's mostly done, add cut tomato. Just cook for couple of minutes and you are done.. Enjoy

Tamarind chutney

Tamarind chutney...Sugar syrup, Tamarind paste, let them boil, add roasted jeera powder, salt,black salt, chaat masala, red chilli powder....
Make sure you don't make it very thick else it will become very sticky kinds when it cools

Lentil rice

Boil akha masoor the brown one till soft 
In a pan heat oil add pepper corns, cinnamon stick, sauté thinly sliced onion to a nice light brown
Then add rice, half boiled masoor, salt,jeera pwd, chilli pwd, bay leaf , raisins if u have pine nut then add double water cook for 12 mins
Tastes better in butter

Heat oil add all whole garam masala
Sauté chopped onion
Sauté g&g 
Add slit green chilli
Then add double quantity of chopped tomatoes sauté for few mins don't cook tomato too much ... Next add water to the thickness of the gravy u want 
Add salt 
Cover and cook

Chicken 65

Atuls yummy chicken 65 recipe:
GG paste salt kalonji seeds, red powder, crushed curry leaves, crushed green chillies ,red chilli powder, garam masala, dhania powder,  haldi,rosemary leaves, hing, 
1 tsp corn starch,1tsp besan, chaat masala

Chicken salt, pepper crushed dhania seeds - marinate

1 egg beaten 

Marinate for half hour, and deep fry

Serve on radish salad with lime

Marinate chicken in corn flour , maida, egg, soy sauce, pepper, g&g , green chilli
Heat oil deep fry chicken and set aside

Heat oil Add spring onion, g&g , green chilli sauté for few mins add soy sauce, water and cornstarch to thicken...
Now add fried chicken to sauce and boil

Chicken soup

Heat oil sauté diced garlic diced onion diced carrot add chicken Italian seasoning now add water good amount then add uncooked rice add chicken stock boil till rice and chicken are cooked. I put big pieces of chicken and when cooked remove and shred.
Then add peas. U can add whatever veggies u want ... I didn't have any additional veggies so only out this

Sauté onion , garlic add mixed veggies , broccoli whatever veggies u want.add pepper , salt, crushed chilli.

In a pan lightly roast all purpose flour till u get a nutty smell add butter then add to milk to make a thick sauce..
Then add the sauce to the veggies add some grated mozzarella
Heat oven at 350 and bake till cheese melts

Wheat dosa

Hot and sour soup

Hot and sour soup recipe:
Chop red onion, cabbage, carrots, celery, red and green pepper into small pieces
Take oil in a pan, sauté all the veggies at hot flame for 10 min.. Add few cups of water to t and let it boil..
Take knorr hot and sour and tomato packs and mix with water and add this to pan.. Take a little corn starch and add water to it and mix it with test if soup.. Let it all boil
Cut cilantro and paneer in small pieces and add to the soup towards the end
Add some rosemary leaves too when u add paneer
